Project: Pinterest

I'm on a roll...can you catch up!?

Project: Crockpot Ribs
Notes: We've had a rack of ribs in the freezer for a couple of months now. Usually we stick the sucker on the braai and grill it to death. This often leaves us gnawing on bones like scrawny, starved mongrels and being unsatisfied by the lack of meat. This recipe was easy peasy -- mostly because I just stuck it in a pot, lathered it in Steers BBQ Sauce and left it to cook. Husband's verdict: best ribs EVER! Better than ANY restaurant. The meat is so tender and juicy ...drool.  *L pats back in delight* 
Project: Chocolate oatmeal no bake cookies

Notes: We live next door to full-time missionaries for our Church. They're awesome, good examples, and angels for giving us something we needed. As a token of appreciation, J suggested I bake them a treat in gratitude. In between the studying and teaching, I managed to whip these babies up in 10 short minutes. Combine sugar, milk, cocoa powder, butter in a saucepan. Bring to a rolling boil. Add oatmeal, vanilla essence and peanut butter. Drop by the spoonfulls onto wax paper/tin foil and let cool completely before lifting and serving.

Notes: With my lemon sugar hand scrub finished off this week, I needed a replacement. Hooray for Pinterest where I found this simple recipe. I combined brown sugar, olive oil and vanilla essence, gave it stir and scrubbed my hands. It smells like freshly baked cookies!

Project: Felt Flower
Notes: It took about 5 minutes to make with cutting out the various sized circles out of felt, sewing the button in the centre and gluing the magnet on the back. Makes for a cute fridge magnet.

Project: Sweet Potato Fries

Notes: Sweet potatoes in Safrica are white...not orange, so they look slightly different. However, they taste amazing! Can't. Get. Enough. Yum! Sprinkle a bit of olive oil and spices onto raw sweet potato strips and bake in the oven at 180 degrees Celsius until golden brown. Go make some...NOW!

Project: Letter Gift Tags
Notes: After browsing the Christmas section at Checkers last Friday, I noticed the sticky label gift tags they were selling were rather pricey..and they weren't exactly cute either. So, with being the frugal lass I am, I stumbled upon this brilliant idea. The best part about it was that it didn't cost me a single cent! I simply cut out letters on an Otees cereal box (hey I warned you this was a cheap project), glued the letter onto a page out of an old collected poems book by W.H Auden (sure he won't mind), and punched a single hole in the top. When it comes time to wrap gifts, I'll tie the letter onto the gift with some ribbon. That way our friends and fan-damily have a personalized gift. Beat that Checkers!

Project: Pinterest

In between the overwhelming task of studying for upcoming exams (anyone want to help me with this crazy poetry!?!), being home alone whilst J-man serves the residents of Port Elizabeth with all their building supplies, stressing out about doctor's appointments, lack of sleep, and deciding what to wear now that it's full blown SPRING time in E-town (do I hear a holla out there somewhere?), I needed a creative fix to keep my engine from shutting down. Yes, I tend to shut down now and then. Of course, like the rest of cyber world, I pin things on boards and hope with all my heart that someday I'll be able to bring each of those into fruition. Cue Pinterest. *Applause* So that's my goal: to try, try, try until I succeed.

The first pin I was inspired to try (mostly because I had these ingredients on hand already) was this:

I combined olive oil, white sugar (my fave) and freshly squeezed lemon juice together. It literally took a minute to make. I admit I was a tad skeptical it would do anything to my hands, but after washing the dishes, I worked a drop of this magic potion onto my hands and... it works! My hands no longer look or feel like an 80 year old slave! Victory! PS) it also works wonders on tired feet.

Project #2:

I modified the recipe slightly a whole lot because pastry is enough of a heart attack waiting to happen thanks without extra butter and cheese, but it still tasted out-of-this-world good. All I combined together was 1 chopped red onion, garlic, herbs, spinach and 2 beaten eggs. Place in center of pastry, seal it, brush with egg wash, bake. It was simple and was enough for 2 meals for lil ole me. That's what I call fuss free and divine.
